Corn Husks are the outside green leaves on a cob of corn, that we usually peel off and discard. You can use them, fresh or dried, as packages to wrap food in for cooking ? usually steaming. They give the food a wonderful corn flavor. Normally the husks are dried and stored for cooking.
- Tamales: Dried corn husks are used to make the classic Mexican dish tamales. The wrappers are soaked to soften them, then stuffed with corn masa paste and a variety of savory fillings such as beans and cheese, stewed pork, chicken or chilies.
- Grill fish: Use your fresh husk to wrap fish, like en papillote, and throw the whole thing on the grill. The husk helps keep the fish from drying out, which often happens when you grill more delicate fish. The end result is a smoky, tender fillet.
